Say this plainly: this is a morning dish and the good shops sell out. Turn up at 08:00, not at 12:00, and never at dinner.
A fish soup that tastes of pineapple and tomato
Nothing about the description prepares you for how light this is. It is a fish-based broth that manages not to taste of fish at all.
The broth is the dish. It is simmered from fish bones and then cut with tomato, pineapple and pumpkin — sometimes bamboo shoot or cabbage as well — which gives it a clean sweet-sour edge and a faint orange colour. It is thin, barely fatty, and it is the single easiest thing on the Da Nang menu for a nervous eater to like.
The chả cá are the fish cakes, and every shop makes their own. Ground white fish is pounded with pepper, dill and spring onion, then some of it is steamed into pale springy discs and some fried into golden ones with a firmer bite. A good bowl has both. On top: rice vermicelli, spring onion, and a side plate of shredded banana blossom, herbs and bean sprouts you add yourself.
Then the table condiments, which locals treat as compulsory. There is a jar of mắm ruốc — fermented shrimp paste, thick and grey — plus chilli paste and lime. A teaspoon of the shrimp paste is what turns a pleasant soup into the version people queue for. If you are wary of it, add half and taste. One variation worth knowing: bún chả cá sứa adds jellyfish, the same textural trick that makes the famous version of mì Quảng work. And many shops will sell you the fish cakes on their own, grilled, to eat with beer later.

Nguyễn Chí Thanh, on the city side of the river, has the two Michelin shops and the reputation. The rest of this list matters if you are staying on the beach and do not want to cross a bridge before breakfast, or if you are still hungry at 19:00, which for this dish is a genuine problem.

Why Nguyen Chi Thanh is worth the trip across the river
One ordinary city-side street carries two Bib Gourmand shops for the same dish, a hundred metres apart. That does not happen by accident.
Nguyễn Chí Thanh runs through Hải Châu on the city side of the Hàn River, about ten minutes and 40,000–60,000₫ by Grab from the beach hotels. It is not a pretty street and there is nothing else on it to see. What it has is a concentration of fish-cake shops that has been building for decades, and when Michelin arrived in June 2024 the inspectors gave Bib Gourmands to two of them in the first list.
109 is at number 109, on the street, with a wide frontage and staff who have dealt with foreigners for years. Hờn is down alley 113/3 — a genuine alley, narrow, with the shop at the end of it — and is the one locals name. The honest comparison: the soup is close enough that you would struggle in a blind test, and the difference is atmosphere. 109 is easy. Hờn is the better story and the better photograph.
Two practical notes about the street. First, alley 113/3 is also where the Àla specialty coffee bar hides, pouring Panama Geisha out of a doorway a short walk from a 30,000₫ soup — see the café page. The one thing that will ruin the plan is arriving late. The pots go on at about 06:00 and the good shops are done between 09:00 and 10:00. There is no lunch service and no evening service, with the single exception of Bà Lý. This is not a shop-hours quirk you can work around; it is how the dish is sold.
